2011/2012 Blackeyed Peas Recipe

This year’s recipe.

Cook up a 11oz package of Melissa’s fresh black eyed peas. (boil until just tender, drain). Cook up 1 Elgin sausage, chopped, to render some fat, then add 1/2 chopped huge red onion and 2 chopped green bell peppers, cook until a bit tender, crush in 3 cloves of garlic, mix well and cook a bit to get the garlic going, then stir in the BEP and 1 can drained and rinsed Allen’s Tiny Field Peas with Snaps. Add half box of low sodium chicken stock, Season with 1 tsp dried oregano, 1 tsp dried basil, and 3/4 tsp garam masala.  A substitute for the garam masala would be some cardamom and cumin since this is such a small amount that just adds a floor to things.  No complexity needed, just a reminder as the basil and oregano will dominate the seasoning. Cover and simmer over low heat for about 10 minutes to let things meld, sprinkle a little flour over it and stir in to thicken a bit.  Eat.

Honestly, I love this year’s result.

Wiped out again

I decided to just start over again.  I plan on using this for posting stuff that I can link other people to.  Not to do traditional blogging.  I might fart around with WordPress a bit to see how it goes.  We will see.
